Nam phrik phao
Nam phrik phao (Thai: 'น้ำพริกเผา)', English: Thai Chilli Jam) is a composite ingredients in Thai cuisine. It features pretty much all of the tastes associated with traditional Thai food sans the usual herbs.
Ingredients
- 20 long of dried chilies
- 6 tablespoon of dried shrimp
- 1/2 cup of shallots (about 10 small shallots)
- 1/2 cup of garlic (about 10 medium cloves)
- 7-8 Thin of slices dried sand ginger
- 4 tablespoon of gabpi (fermented shrimp paste), roasted wrapped in aluminum foil or banana leaves until fragrant
- 4 tablespoon of fish sauce
- 1/2 cup of tamarind paste
- 2 tablespoon of palm sugar
- neutral taste oil for frying
