Pavement coffeehouse is a micro-chain of coffee shops located in Boston, MA.[2] Since the opening of its first storefront in 2010, Pavement has become one of the city's premier coffee shops, with six locations being built since its founding.

Early history

In 1997, owner Larry Margulies, originally from Chicago, graduated from Boston University. Upon graduating, Margulies began working as a store manager at a small bagel shop located in Allston near his alma mater called Bagel Rising. After two years of working there, Bagel Rising went for sale in 1999. Twenty-three-year-old Margulies bought the bagel shop and started his own business.[3]

After a few years of building up his shop, Margulies was began to grow his business even more. Margulies was introduced to the owners of the mid-west based coffee franchise, Espresso Royale Caffe,[4] that had three locations in Boston at the time. In 2004, Margulies became the wholesale bagel supplier for all of their Boston-based locations.[5] While doing so, he began to study the ins and outs of the coffeeshop business. In 2006, Margulies purchased the three Espresso Royale Boston locations and began their transformation into what he called Pavement Coffeehouse. He opened the first Pavement on Boylston Street in 2010 and spent the next five years consolidating and converting the Espresso Royale and Bagel Rising locations into Pavement Coffeehouse locations.[3]

Locations

Today, there are six Pavement locations in the Boston area. The first location opened in 2010 on Boylston Street, right of the campus of Berklee College of Music. From there, Margulies converted the three Espresso Royale locations into Pavements one by one. The second Pavement location was opened near Northeastern University's campus on Gainsborough Street in March 2012. The third location was opened on the popular tourist destination, Newbury Street, in October that same year.[4] The fourth Pavement location, and the final remaining Espresso Royale, was opened in 2014, located in the heart of Boston University's campus on Commonwealth Ave.[4] The fifth location was opened where Marguiles got his start, in the storefront of Bagel Rising, in 2014 and in the 2014/2015 the sixth and final location was opened in the Fenway neighborhood.[5]

Present-Day

During its five year building period, Pavement has become one of the most frequented coffeeshops in Boston[6] and has received multiple awards from magazines, and food blogs (see below). Pavement continues to sell bagels made with the Bagel Rising recipes, while also offering other pastries, sandwiches, salads, and soups. The menu has been expanded to include vegetarian and vegan options, as well as gluten free options.[7] Additionally, the chain now serves the popular coffee brand, Counter Culture Coffee.
